The wine boasts an intense aroma that gradually unfolds into notes of sage and bitter herbs, flint and gunpowder, and finally unripe apricots and citrus. Gavi dei Gavi” La Scolca is an iconic white wine from Cortese, one of the best from the La Scolca house. The name was coined and trademarked by Giorgio Soldati—it means “the best of Gavi” and is distinct from the regular Gavi di Gavi. It is also known as the “Black Label.” The grapes are grown in the heart of Rovereto, Gavi’s unofficial Grand Cru, on sunny hills with volcanic, iron, and limestone soils. The vines are approximately 60 years old, and the harvest is hand-picked using meticulous selection. Fermentation and aging take place in stainless steel tanks, preserving the purity and character of the Cortese grape.
