Chatelain, Pouilly-Fum\u00e9 &#8220;Les Chailloux Silex&#8221; is crafted from Sauvignon Blanc grapes, which acquire their distinctive character from the local silty-clay soils rich in silicon. &#8220;Chailloux&#8221; translates to &#8220;hot stones,&#8221; and the soils bearing this name have an orange-yellow tint. The expressiveness and complexity of the wine develop after fermentation in stainless steel tanks at a controlled temperature of 16-18 \u00b0C and aging on fine lees.
